Blue Cheese Mushrooms on Toast

Cheese on toast gets a little twist with this blue cheese mushrooms on toast recipe.  Fridge to plate in less than 20 mins.

Per person (or per slice)

  • 70g button or chestnut mushrooms, sliced or chopped
  • 50g Blue cheese  ( I use St Agur), but use your favourite, or what you have in the fridge!
  • 50g Cream cheese
  • small knob of butter.
  • 1 slice of toasted sour dough bread
  • Chives chopped for garnish

Melt the butter in the pan and soften the mushrooms.  Crumble the blue cheese over the mushrooms and add the cream cheese.

As soon as both cheeses have melted, pour the cheesy mushrooms onto the toast.  Garnish with chopped chives and serve immediately.

This could be posted up a bit for canapés or a starter, by making teeny mouth sized versions.
