Mexican Spicy Potato Recipe

Mexican Spicy Potatoes are a great easy supper – or they can be a great side dish alongside something more substantial.  Anything easy always gets my vote.Mexican Spicy Potato RecipeEven better, if you are using leftover potatoes this can be ready in less than 5 minutes.  Perfect for when you are cooking for 1 person, as its one pan cooking and easy to make a small amount.   (Or a large amount if you are greedy like me.)

Ingredients (for a not too greedy person):

  • 3 slices of chorizo
  • 50g of onion sliced
  • 75g boiled new potato sliced
  • pinch of Chilli flakes
  • pinch of cayenne pepper
  • Salt and pepper to taste.

Chop the chorizo and sauté the onion with it until soft. There is no need to add any further oil, as it will cook in the fat from the chorizo.  I love the way the dye from the chorizo turns the onions red.Mexican Spicy Potato RecipeOnce the onion is soft, add the potato and warm through.Mexican Spicy Potato RecipeAdd chilli flakes, cayenne pepper and seasoning to taste.Mexican Spicy Potato RecipeFor a great spicy breakfast, add an egg to the mixture, or to bulk up the dish add sautéed peppers and mushrooms.
