Beetroot Coleslaw with Carrot and Lemon
Beetroot Coleslaw with carrot, radish and lemon, is the absolute best coleslaw you will ever have. No arguments. Its got a bit of everything. Sweet carrots, peppery radish, zesty lemon, creamy mayo. Throw away all your other coleslaw recipes, you wont be needing them!

Ingredients:
- 1 Beetroot
- 3 Carrots
- 6 Radish bulbs
- 1 lemon – zest and juice
- Mayo – large squirt
- Pinch of salt
Method:
The instructions couldn’t be more simple. Grate all the vegetables into a bowl using the thick park of the grater. Zest the lemon, juice it and add it to the vegetables with the large dollop of mayo. Stir well to combine all the ingredients for the beetroot coleslaw.



The vegetables may yield a bit of juice after sitting for a while. I quite like it like that, but if you don’t, drain off the excess. This is very a very pretty salad, as well as being really tasty with grilled/barbecued meat and fish. Beetroot coleslaw is also my favourite side dish to serve along side my homemade sausage and veggie rolls.
