Roasted Carrot and Parma Ham Nibbles
Regular visitors to the blog will know I’m a big fan of nibbles. They can be a bit of a faff. But a plate of something fancy along with drinks can be a great way to start an evening. These are perfect to have with a few other snacks at a drinks party. Or pre dinner instead of starters.
Ingredients
- 1 packet mini carrots (approx 16 carrots – ideally with the tops still on)
- Olive oil for roasting
- Hot Chilli powder
- 8 slices of parma ham (half per carrot)
All the preparation can be done in advance if necessary. Have them wrapped and ready to go in the oven just as guests arrive. They can be wrapped in the ham, and kept in the fridge 24 hours beforehand.
Method
Peel the carrots Lightly coat in olive oil
Place in a baking tray and sprinkle lightly with hot chilli powder for a bit of kick.
Roast in a oven for 25-35 minutes at 18o C.
Remove from the oven and allow to cool (enough to touch). Wrap the carrot and parma ham. each carrot will need approx half a slice.
Due to some stealing while I wasn’t looking, 1 carrot needed to be wrapped in salami. I was lucky to lose only 1! Bake in a hot oven for 10 -15 mins at 180C until the parma ham is crispy.
Remove and serve the roasted carrot and parma ham nibbles immediately.
Ideally serve with a yogurt dip, or a salsa.My son had a friend staying while I was photographing these….they literally pounced on the carrots as I was finishing up the photographs.

Luckily I’ve made these many times before……or I wouldn’t be able to vouch for how tasty they are. These greedy boys ate them all in about 2 and half minutes!
