Delicious and Easy Tandoori Cauliflower
Easy tandoori cauliflower bites make a great nibble to eat with drinks, or a side to go with your favourite curry.
This recipe was given to me by a friend who gives it to her Indian Mother in Law every time she visits. If its good enough for the MIL I say! Although this is not authentic tandoori, its really tasty, and added bonus; super easy and healthy.
Also, this makes a great side dish or vegetarian main.
Ingredients
- A medium cauliflower cut into florets (approx 600g)
- 450ml natural yogurt
- 3 tbs of vegetable oil
- 2 tbs lime juice
- 1.5 tsp garam masala
- 2 tsp garlic paste
- 2 tsp ginger paste
- 1 tsp salt
- 1.5 tsp turmeric
- 1 tsp red chilli
Optional thinly sliced onion rings to garnish.
Method
Break the cauliflower into bite sized florets before mixing all of the other ingredients into paste. Coat the cauliflower fully, and leave for 1-2 hours to marinade.
When you are ready to cook, pre heat the oven to 180 degrees C. While the oven is heating, place the tandoori cauliflower on a lined baking tray. Don’t put too many on the tray as this will cause steam. Roast in the oven for 20 minutes or until soft and tender. They should be served immediately, but can be cooked ahead in small batches, and reheated if necessary. When cooked, the florets look like this.
Finally, serve with thinly sliced onion rings and a wedge of lime.
