No Bake Chocolate Fridge Cake
This no bake chocolate fridge cake is more like fudge than rocky road. Delicious and more-ish, we often have a batch of it sitting in the fridge. It doesn’t sit around for long. I cut it into tiny squares (In an attempt to save me from myself). However rather than a trim waistline, this tactic just leads to multiple trips to the fridge!
Ingredients
- 300g Chocolate Digestives
- 400g Milk Chocolate (or a mix of Plain and Milk)
- 125g Butter
- 150g Golden Syrup
- 100g Raisins (optional)
- Additional dark chocolate and white chocolate melts to decorate (3-4 squares of each)
Method
To get the delicious fudgey texture, you need to blitz the biscuits in to fine crumbs. Keep a few biscuits back and break them into pieces about 1/2cm wide to add a bit of texture.
Line a tin with baking parchment. Mine is 11×7 inches. Something around those dimensions will give squares around an inch deep.
Crush 3-4 of the biscuits to small chunks. For the remainder, blitz in a blender. If you don’t have a blender, bash with a rolling pin. Whatever method try and get them to a fine powder. Melt the chocolate.
Add melted butter (or butter to the hot melted chocolate and it will melt in together).
Add the golden syrup, and combine with buttery chocolate mix.
Chop the raisins finely, before adding this and all the biscuits to the mix.
Combine thoroughly, before spreading into the lined tray.
Decorate with white and dark chocolate melts.
Slice and enjoy. Perfect for a treat after school, or served with coffee.
Alternative Birthday Cake
This is so popular in our house, that Abbi even requested it for her last birthday party.
We had 40 kids to a disco in the house. (aaaaargh). I piled 80 small squares in a bowl with some birthday candles. It’s probably the easiest ‘birthday cake’ we have ever made. And probably the most popular. Abbi’s guests ignored pretty much all of the other food. Barely a crumb of the fridge cake was left.
